History of sushi

Sushi is believed to have been introduced by Japan in the 9th century, and there are many legends and folklore surrounding the true history of sushi. Sushi is said to have become more popular as Buddhism spread since the Buddhist diet doesn't allow you to eat meat, so fish was then turned to as a dietary staple. 

Throughout the history of sushi, Hanaya Yohei is considered the creator of modern nigiri sushi. He modernized, for the early 1800s, the fermentation process and found that if you added enough rice vinegar and salt to freshly cooked rice, forming it into a small hand-pressed ball and topping it with a thin slice of raw fish, sushi could be made very quickly. There was no need to ferment the fish, as prior sushi makers had been doing, and with that Nigiri became the standard way to prepare sushi. 

As the world has continued to evolve, sushi has become more and more popular. You are probably seeing Japanese sushi restaurants popping up more and more than they were 10 years ago, and rightfully so! It's a delicious way to consume raw fish when done right.
