Ingredients

The base of this copycat Sweetgreen bowl is arugula. However, you can use whatever green you like, whether it's mixed greens, spinach or kale. The next base is purple cabbage, I've made this salad with shredded Brussels Sprouts as opposed to cabbage and it still has that super crunchy factor that the purple cabbage adds.

How to make this Sweetgreen Elote Bowl

  1. In a bowl, lay your base of arugula.
  2. Top with the remainder of your toppings.
  3. In a food processor or blender, blend together your dressing ingredients.
  4. Dress with the lime cilantro jalapeno viniagrette.
  5. Toss and enjoy!

How to make charred corn

Making the charred corn for this copycat elote bowl is so easy! Here's how to do it.

  1. In a large frying pan, heat up 2 tablespoon of olive oil.
  2. Add in 1 bag of frozen corn; you could also use a drained can of corn.
  3. Season with garlic, cumin, chili powder, salt, and pepper.
  4. Once the corn is defrosted, add in 1 can of green chilies.
  5. Sauté until the corn is somewhat charred.
  6. Set aside to cool, and then the corn is ready for your salad

Ingredients

Lime Cilantro Jalapeno Vinaigrette

  • 1 lime, juiced
  • 1 jalapeno, seeded
  • 1 clove garlic
  • ½ cup cilantro
  • ½ tablespoon cumin
  • salt + pepper, to taste

Roasted Corn

  • 2 tablespoon olive oil
  • 1 bag roasted corn
  • 1 teaspoon garlic
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • 1 red pepper, diced
  • 1 can green chilies
  • salt + pepper, to taste

Sweetgreen Corn Elote Bowl

  • 1 cup roasted corn + peppers
  • 4-5 cherry tomatoes
  • ½ cup shredded cabbage
  • ¼ cup cilantro
  • ¼ cup goat cheese

    1. Yes! I like to do chili powder, garlic powder and onion powder. I also used a canned elote mix from Aldi which was pretty flavorful.

    Review is for the dressing, which was very good but also very spicy even with the jalapeño seeds removed!
