- It's an easy meal prep salad or health side salad for a weeknight dinner! I like making this salad as a meal prep to have lunch ready for the week, but it's also a great side salad for dinner.
What is in a Greek salad?
In a traditional Greek salad you have tomatoes, cucumbers, green bell peppers, red onion, olives and feta cheese. It is seriously one of my favorite salad recipes, I think I can eat Greek salads every day for the rest of my life.
What's in this Greek couscous salad?
I keep almost all of the traditional Greek salad ingredients for this couscous salad and add in spinach, and couscous and swap out red onion for green onion.
- Couscous - use whatever brand you prefer. You can also opt for pearl couscous, too. You can normally find couscous near the rice at your local grocery store.
- Chopped Spinach - I use traditional kitchen scissors, or you can use these chop salad tongs.
- Grape Tomatoes - I prefer grape tomatoes, but you can use roma tomatoes or whatever tomatoes you would like. Grape tomatoes tend to keep better if you're looking to make this as a meal prep salad.
- Green Bell Pepper - you can use whatever peppers you like best, to keep it traditional, I like to include green bell peppers.
- Persian Cucumbers - these are mini cucumbers and i find them easier to slice into smaller pieces than traditional cucumbers.
- Green Onion - I like using green onions in this salad because they are much milder than red onion, but still give you that bite that you want.
- Kalamata Olives - I know olives may be polarizing, but I buy traditional kalamata olives. You can also look for marinated olives to add some extra flavor to your couscous salad.
- Crumbled Feta - I like to use reduced-fat crumbled feta, but you can use you favorite feta! I always like buying it crumbled though to avoid the added mess of crumbling the feta yourself.
- Tzatziki - this is what I use for my dressing. I love buying the spinach and artichoke tzatziki from ALDI it is seriously the BEST.
How to make this easy couscous salad
- Cook your couscous according to the directions on the box.
- While that's done cooking and set aside to cool, chop your veggies and olives.
- In a large bowl, mix together your couscous, veggies, olives and crumbled feta.
- Don't dress your salad as a whole! Wait until you serve the salad and dress it with tzatziki.

Here are tips for making the best salad.
Don't dress it if you're not going to eat it! That's how the salad gets soggy and gross super quickly, so I always say dress what you're going to eat and store what you're not.
Make sure you have quality air-tight containers to store your salad in. I have these plastic bowls with lids, which makes it super easy to prep your salad in the bowl, find the lid and store it in the fridge for later!
Add in any and all the veggies you want! You don't have to stay traditional. You can add in broccoli, carrots, chickpeas, etc.

- 4 cups Chopped Spinach
- 1 cup Grape Tomatoes
- 1 cup Green Bell Pepper
- 1 cup Persian Cucumbers
- ยผ cup Green Onion

- 1 cup Crumbled Feta
- ยผ cup Tzatziki
