It’s simple! It is so easy! A majority of this recipe uses pantry staples, so you can put this together whenever you're wanting a quick, yet healthy shrimp dinner.
What do you need for Mediterranean marinated shrimp?
Here's what you'll need for this Mediterranean marinade.
Garlic. You can use fresh or granulated garlic, whatever you have on hand.
Basil. I like using dried basil for the marinade and then fresh basil to top the shrimp skewers.
Oregano. I rarely have fresh oregano on hand, so I always use dried.
Salt + Pepper. Of course, you'll need salt and pepper.
Olive Oil. I prefer to use olive oil, you can also use avocado oil if that's what you prefer.
Lemon. You must use fresh lemon for this marinade. This is the one ingredient I will say has to be fresh.
How long should you marinate shrimp for grilling?
I always say you should marinate for at least an hour, no matter what it is. I marinated these Mediterranean shrimp skewers for just over 2 hours and they were so flavorful.
Tips for grilling shrimp
Shrimp will shrink! You don't have to space them out nearly as much as I did on these skewers.
Keep the grill at medium heat. You don't want to char the shrimp too much, and they will cook fairly quickly.
Soak the skewers. This is a general tip whenever you're making grilled skewers, you always want to soak them! Some people recommend letting them sit in water for 30 minutes, I just rinse them really well.
Brush the excess marinade on them while they're on the grill. Get every last bit of flavor out of that marinade!
How to store this recipe?
The best way to store leftover shrimp is in an airtight container. These Ello food storage containers are my absolute favorite. They're perfect for marinating or storing!
How long does grilled shrimp last in the fridge?
Grilled shrimp lasts 3-5 days in the fridge if stored in a proper air-tight container.
What to make with the leftovers?
This shrimp is seriously so good hot or cold leftover. You can add it to this Greek Couscous Salad or even make some Greek wraps with it!
