It's easy to make. This cocktail requires absolutely no mixology skills. It's as easy as pouring the 4 ingredients into your favorite wine glass, giving it a stir, and enjoying it on your patio, pool deck, or favorite happy hour spot.
It's so delicious. If you find that a traditional Aperol Spritz is a little too bitter for you, try this one! The pineapple juice adds the slightest bit of sweetness that makes for a delicious fruity spritz that tastes like you're on the Amalfi Coast.
What is Aperol?
Aperol is an Italian aperitif. It has a flavor profile of bittersweet orange, gentian, rhubarb, and cinchona. The color is a classic orange-red that makes for such a fun and photo-worthy alcoholic beverage to sip on during the summertime.
It's a unique spirit for sure, that not everyone likes! Which is why I'm suggesting this delicious pineapple Aperol Spritz if you don't like the regular recipe. You may just need a bit of sweetness added to the drink, and that's exactly what the fresh pineapple juice does.
Ingredients
Aperol. Aperol isn't like vodka or tequila, there aren't any brands of Aperol outside of Aperol. Luckily, it's taken off in popularity so you can get it in almost any grocery store, or liquor store.
Pineapple Juice. I like to use Simply Pineapple for this, but you can use whatever pineapple juice you have on hand or grab at the grocery store.
Lime Juice. I like to add a bit of citrus sweetness with the fresh lime juice, it pairs so nicely with the bitterness of the Aperol and the sweetness of the pineapple juice.
Prosecco. I like using the $8 prosecco from either Trader Joe's, ALDI or Costco for this recipe! I enjoy that prosecco, it doesn't break the bank, but it still tastes delicious in this drink.
Club Soda. You only need a splash of club soda for any spritz you make.
How to make an Amalfi Spritz
- Fill a wine glass with ice.
- Pour 3 oz. of prosecco in followed by 1 oz. of Aperol, 1 oz. of pineapple juice, ½ oz. of lime juice, and 1 oz. of club soda.
- Give it a good stir.

Not really! Because you want the bubbles to be as fresh as possible, it's difficult to make this ahead of time. If anything, you can combine the Aperol and pineapple juice ahead of time, but you'll want to assemble the full cocktail when it's time to drink it.
