What is brioche bread?
Brioche is a rich, buttery French-style bread. It's as if a loaf of bread and a pastry had a baby. It's rich, buttery, sweet and has a beautiful golden crust, but also has that bread-like dense texture.
What is the difference between brioche and French bread?
Brioche is technically a french bread. However, a French bread loaf as we know it, is not as sweet as brioche.
Ingredients
Brioche Bread. I used the chocolate chip brioche loaf from ALDI. You can use a chocolate chip or regular brioche loaf.
Eggs. Eggs are necessary for French toast! You'll need 6 of them so be sure you have enough before you start cooking.
Milk. I like to use a mixture of milk, I use skim milk, you can use whatever you want, and heavy cream to add some richness to the French toast casserole.
Heavy Cream. I don't like to use too much heavy cream, but I do like to use a little bit of it. You can also use half and half.
Vanilla. French toast is sweet, so you absolutely need a splash of vanilla extract.
Cinnamon. Cinnamon is essential to French toast! You could use nutmeg or allspice if you don't have cinnamon, but highly recommend using cinnamon.
Brown Sugar. If you don't have brown sugar, you can use granulated sugar, but I highly recommend using brown sugar.
Powdered Sugar, Fruit and Maple Syrup. These are all various toppings ideas that you can have fun with.
How to make brioche french toast casserole.
- Mix together milk, eggs, vanilla, cinnamon and brown sugar in a bowl.
- Cube and place your brioche bread into a greased 9x13 dish.
- Pour your milk/egg mixture over the bread and give it a good mix in the 9x12 baking dish.
- Cover and place in the fridge for a minimum of 1 hour.
- Take out of the fridge and preheat your oven to 350F.
- Cook at 350F for 40 - 45 minutes.
- Let it cool for about 5 minutes before serving.
- Top with powdered sugar, berries and syrup!
Storing the french toast casserole.

Best way to reheat?
If you're reheating the casserole as a whole, I recommend covering loosely with aluminum foil and cooking it for 10 minutes at 300F. If you are just reheating a serving, place it in the microwave, uncovered, and microwave in 30-second increments.

Why is my French toast casserole soggy?
Your brioche could be sliced too thin. Slice in 1-inch cubes to ensure that your casserole is moist, but not soggy.
