St. Patrick's Day isn't complete without a little hangover breakfast sandwich. So, why not make it festive with this Reuben Breakfast Sandwich?

This corned beef breakfast sandwich will be your go-to post St. Paddy's Day celebration meal.
The carbs from the bagel, the grease from the egg and the corned beef, the cheese, mixed with the fermentation of sauerkraut which is good for your stomach, this is the perfect hungover breakfast sandwich after one too many Guinesses or Whiskey Gingers.
Now this isn't your traditional Corned Beef Hash... this is a 10/10 star bagel breakfast sandwich.
I know I love a good bagel sandwich after a night out, and this doesn't disappoint. It's also substational enough but requires nearly no work. All you have to do is toast your favorite bagel, fry up an egg to your liking and assemble. You can heat up the corned beef on the skillet, too, if you'd like. But, that's not totally necessary.
The necessary components of a bagel breakfast sandwich...
I think a bagel breakfast sandwich always needs 5 components.
- A bagel. I feel like that's obvious. 9 times out of 10, I will always go with an everything bagel.
- A meat. Like how this sandwich has corned beef, I also like some ham or smoked salmon. Yes, I know smoked salmon isn't necessarily a "meat" it's "seafood," but you get what I'm saying. It falls under the same category.
- Cheese. Whether it's cream cheese or a slice of cheese, you need cheese.
- An Egg. Some may say eggs don't go with cream cheese, but I beg to differ. I think any bagel breakfast sandwich needs an egg.
- A sauce. 99.9% of the time the sauce for me is Sriracha, or any hot sauce. But for the case of this Reuben breakfast sandwich, thousand island is the way to go.
Ingredients needed to make this Reuben breakfast sandwich
If you know what goes into a traditional Reuben, you more or less know what you need to make this Reuben bagel sandwich.
- Bagel - I like making these with everything bagels, but you can make them with your favorite savory bagel!
- Corned Beef - You can use leftover corned beef or corned beef from the deli. I always opt for Boar's Head or Vienna if I'm buying corned beef from the deli.
- Swiss Cheese - Slices of swiss cheese are a must for this sandwich.
- Sauerkraut - This is entirely optional, but a true Reuben sandwich does have sauerkraut on them.
- Thousand Island - You need a condiment for any sandwich and for this corned beef breakfast sandwich, you need thousand island!
How to make a bagel sandwich
I mean, this couldn't be any easier. You just can't over cook your egg if you want a runny yolk!
- Heat some butter or oil in a frying pan. Wait 3-5 minutes, then crack your egg into the pan. Cook your egg however you like.
- While your egg is cooking, toast your bagel.
- Once your bagel is toasted and your egg is cooked, assemble your sandwich.
- Bottom half of the bagel, cheese, egg, corned beef, sauerkraut, thousand island, top half of the bagel

Reuben Breakfast Sandwich
Ingredients
- 1 Bagel toasted
- 1 Egg cooked to your liking
- 1 slice Swiss Cheese
- 2-3 slices Corned Beef
- 2-3 tablespoon Sauerkraut
- 1-2 tablespoon Thousand Island
Instructions
- Heat some butter or oil in a frying pan. Wait 3-5 minutes, then crack your egg into the pan. Cook your egg however you like.
