How do you prep chicken breast?
There are a few ways to prep chicken breast for chicken salad.
1. Pan-Cooked Chicken Breast
- I like to cut raw chicken into small pieces prior to cooking.
- I cut it into very tiny bits and cook it in a skillet over medium heat.
- Season with salt, pepper, and garlic powder.
- Remove from the heat, and allow to cool.
2. Oven-Baked Chicken Breast
- Preheat your oven to 450F
- Season your chicken breasts with salt, pepper and garlic powder.
- Bake your chicken at 450F for 13 - 18 minutes or until it's reached an internal temperature of 165F.
3. Air Fryer Chicken Breast
- Preheat your air fryer to 360F
- Season your chicken breasts with salt, pepper and garlic powder.
- Bake your chicken at 360F for 18 - 20 minutes or until it's reached an internal temperature of 165F.
4. Rotisserie Chicken
- Drive to your favorite grocery store and pick up a rotisserie chicken

Chicken Breasts. I prefer using chicken breasts for this recipe since it's a leaner cut of chicken.
Greek Yogurt. Be sure it is plain Greek yogurt! I always opt for the non-fat plain yogurt from ALDI.
Buffalo Sauce. You can make your own buffalo sauce if you'd like, or pick up your favorite brand from your local grocery store.
Celery. I always love adding celery to any chicken salad recipe, I love the crunch it adds.
Ranch Seasoning. I love the flavor that ranch seasoning adds to this buffalo chicken salad. It adds a dynamic layer of flavor that is great.
How to make this spicy chicken salad recipe
- Choose your preferred method of cooking your chicken breasts, and allow for it to cool completely before assembling. I like to stick the chicken in the fridge for a bit to expedite that process.
- In a bowl, add your 1 lb of diced or shredded chicken, 4 tablespoon greek yogurt, 2 tablespoon buffalo sauce, 4 tablespoon diced celery, and ½ teaspoon ranch seasoning.
- Mix together until fully combined. Taste test and feel free to add any additional ingredients based on your personal preference.
- Serve with crackers, between slices of bread or in lettuce wraps.
