It's flavorful. The marinade is so full of flavor and it's such a simple marinade made with pantry staples and a few fresh ingredients. It's customizable. This is such a versatile cut of meat and the air fryer is a great way to cook it to perfection.
Ingredients
Skirt Steak. Not to be confused with flank steak, though it often is, skirt steak is the cut of meat that is in front of the skirt steak. It's known for its flavor rather than tenderness, which is why I recommend marinating this overnight if you're able to! The acid in the citrus helps break down the meat so although skirt steak is not traditionally tender, you'll get the best results the longer you can marinate.
Olive Oil. No matter what marinade you're making, you'll want a little oil. I prefer to use olive oil, but avocado oil is also a great option. Both have mild flavors and high heat points so you can still keep some of the benefits.
Soy Sauce. The salt content in soy sauce helps with the flavoring of the steak. I prefer to use soy sauce as opposed to salt in marinades. It also helps the outside of the beef to caramelize giving it that rich color.
Lime Juice. Lime, or any citrus juice, helps break down the meat and give you such a tender steak. I prefer using lime juice in this particular carne asada-inspired marinade.
Cumin. Dried cumin is a spice cabinet necessity for me, and I love including it in this quick marinade. I always have it on hand and it adds an amazing flavor to the steak.
Chili Powder. To offset the saltiness and slight sweetness from the lime juice, I like to add a bit of spice and chili powder is a great way to do that in this air fryer flank steak recipe.
Fresh Garlic. No matter what marinade you're making, you have to include fresh garlic.
Cilantro. Fresh herbs are always a must when making a marinade and cilantro is perfect for this particular one.
Pepper. To round out the saltiness of the soy sauce, you have to add just a bit of fresh black pepper.
What is skirt steak?
Skirt steak is a cut of the cow near the chest, abdominal cavity, and ribs. It's right above flank steak, which it frequently gets confused for. Skirt steak is very flavorful, but also a tougher cut of beef. That's why it's so important to marinade before cooking skirt steak. The marinade will not only add that extra flavor, but it'll help break down the muscle fibers of the meat to give you a tender, juicy steak.
