Ingredients
Cream of Coconut. I recently became a coconut fan after not loving coconut for the longest time, I am finally coming around to coconut!
Pineapple Juice. You’ll always catch Dole Pineapple Juice in stock on my bar cart! I buy the little cans, so that way when I open a can, I don’t waste a bunch of pineapple juice.
Orange Juice. Orange juice is a must for a mimosa!
Coconut Rum. To really add to the pina colada flavor, I love adding a splash of coconut rum. If you don’t have or like coconut rum, I included some substitutions below.
Prosecco. Of course, a mimosa needs some bubbles!

- In a champagne flute, add in ¼ oz cream of coconut, ½ oz mango juice and ½ oz orange juice. Carefully stir the cream of coconut together with the mango and orange juices.
- Add 1 oz of coconut rum, and top with prosecco.

- Store in the fridge once you’re ready to serve.
