If you're looking to spice up your grill game, throw some of your favorite seafood (I always opt for salmon or shrimp) or chicken (thighs or breasts) in a spicy cashew butter marinade and let it sit in the fridge for a minimum of 2 hours. This is a favorite spicy cashew butter dressing recipe, it's simple, refreshing and you can get fun and creative with your shrimp taco toppings.
INGREDIENTS
- 1 lb shrimp
- 2 cups cashew butter dressing
- Taco Shells
- Toppings - I love using cabbage, or a coleslaw, and Trader Joe's has a great Mango Jicima Slaw that I love pairing with this dressing.
DIRECTIONS
- In a bowl or ziplock baggie, pour in your shrimp + add in your spicy cashew dressing. Place in the fridge and marinate for at least 2 hours.
- Either on the stove top or on the grill, cook your shrimp.
- Assemble your tacos and that's it!
