line a baking sheet, or thin cutting board, with aluminum foil. using a ½ tablespoon spoon, scoop out 12 Nutella balls. Place into freezer.
Add flour and baking powder to mixing bowl and whisk until well combined, only about 15 seconds.
To the bowl of a stand mixer or a large bowl, add softened butter and both sugars. Beat or mix until mixture is smooth and fluffy, about 2 minutes.
Add your egg and once fully incorporated add each teaspoon of vanilla. Beat on low until your vanilla is fully combined.
Slowly, add in your flour/baking powder mix. I add it in in 4 batches.
Once your flour/baking powder is just mixed in, fold in your chocolate chips.
Cover with a towel and place in your fridge for a minimum of 30 minutes.
Once your dough has chilled, preheat your oven to 350F° and start to prepare your cookies.
Place parchment paper over your cookie sheet and take 4 Nutella balls out of the freezer.
Scoop out a spoonful (about 1 tbsp) of dough, create an indent in the middle of your dough, place the frozen Nutella in the middle, and take a half spoonful of dough to place on top. Pinch the sides to make sure the dough ball is closed and roll into a circle using the palms of your hands.
Place your 4 dough balls on your parchment paper-lined cookie sheet and bake for 15 minutes. Pull the cookies out of the oven and let them sit for 3 minutes before transferring them to a cooling rack.
Repeat the above 3 steps until your dough is gone.
