Sheet Pan Sausage and Sweet Potato Bake
This chicken sausage, kale and sweet potato sheet pan bake is ideal for meal prep or even making dinner for a crowd.

- 2 cups Sweet Potato Sliced
- 2 cups Chopped Kale
- 4 links Andouille Sausage Sliced
- 2 tablespoon Olive Oil
- 2 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- ¼ teaspoon Salt
- ½ teaspoon Ground Black Pepper
Preheat your oven to 375F
Slice your sweet potatoes about ¼ inch thick. Once sliced, place in large mixing bowl. Chop you kale into bite sized pieces, pour into the large mixing bowl with the sweet potatoes.
Drizzle your 2 tablespoon of olive oil, garlic powder, onion powder, salt and pepper over your sweet potatoes and kale, mix well
Spread the sweet potatoes and kale mix evenly across the sheet pan, set aside.
Slice your 4 andouille sausage links and place evenly on top of your sweet potatoes and kale.
Bake for 30 minutes, or until your sweet potatoes are done
Allow to cool, eat right then and there or pack your favorite tupperware for meal prep!
