Preheat your oven to 350F and line a cookie sheet with parchment paper. Set aside.
In a medium-sized bowl, mix together your flour, baking soda and salt. Set aside.
In a bowl of your stand mixer or a bowl with an electric mixer, add in your room temp butter and both sugars. Blend until the butter and sugars and mixed together and are nice and fluffy.
Add your egg to your butter/sugar mixture and mix well. Once your egg is incorporated, add your vanilla extract. Mix well.
Slowly, add your dry mix to your wet.
Once it is just mixed fully together, fold in your chunks of Kit Kat and chocolate chips. Be sure to save extra Kit Kat for the top of your cookies!
Using a 2 tablespoon cookie scoop, fill up your baking sheet, and add extra chunks of candy on top.
Bake the cookies for 8-10 minutes, or until golden brown.
Once done, using a spatula, transfer to a wire rack to cool. Repeat the process of scooping your cookie dough onto the baking sheet and baking for 8-10 minutes.
Allow for the cookies to cool slightly before eating or store them in an airtight container for later.
