I love the Trader Joe's Sweet Corn and Burrata Ravioli and most recently, Aldi has come out with a similar product! The Aldi seasonal ravioli never disappoint, and I created this roasted red pepper sauce with white wine and garlic to pair perfectly with the ravioli and it's the perfect summer pasta dish.
In a large stock pot filled with water, boil the water. Once boiling, add in your ravioli and cook for 3 minutes. Drain the ravioli, set aside and save 2 tablespoon of pasta water.
In a large frying pan over medium-low heat, add in your 2 tablespoon olive oil, diced onions and minced garlic. Saute for 7-10 minutes until the onions are translucent and the garlic becomes fragrant.
Add in your roasted red peppers, salt, pepper sweet corn, ravioli and white wine.
Simmer on medium heat, uncovered, for 10 minutes. Stir carefully and occasionally.
