Whipped mashed potatoes are such a perfect side dish for fall and winter. By whipping the potatoes, you not only get a super light and fluffy texture, but you don't have to mash them! That's a win-win in my book.

Garlic Whipped Mashed Potatoes

Whipped mashed potatoes are such a perfect side dish for fall and winter. By whipping the potatoes, you not only get a super light and fluffy texture, but you don't have to mash them! That's a win-win in my book.

Ingredients
  

  • 4 lb russet potatoes peeled and chopped into quarters
  • 1 tablespoon granulated garlic
  • 1 tablespoon salt
  • ½ tablespoon ground black pepper
  • 3 tablespoon butter
  • ¼ cup parmesan cheese
  • 1 cup milk or cream

Instructions
 

  • Peel your potatoes and cut them into quarters.
  • Bring a pot of water to a boil, and carefully place your potatoes in the water.
  • Let your potatoes cook for about 15 - 20 minutes, or until you can easily pierce them with a fork or knife.
  • Drain the potatoes and add to your mixing bowl.
  • Add 1 tablespoon of granulated garlic, ½ tablespoon salt and 1 cup of milk or heavy cream.
  • Using either a stand or hand mixer, whip your potatoes until smooth.
  • Add 3 tablespoon of cold butter, cut into ½ tablespoon chunks, and ½ cup parmesan cheese.
  • Fold in the butter and the cheese using a wooden spoon or spatula.
  • Add pepper and any additional salt you desire.
  • Serve immediately and enjoy!
