This chicken pastina soup recipe is so delicious and so cozy. It's a simple chicken and noodle soup recipe that is perfect for those chilly winter nights.

Ingredients
  

  • 2 tablespoon olive oil
  • 1 onion
  • 4-6 cloves garlic
  • 3 stalks celery
  • 3 large carrots or 2 cups of diced baby carrots
  • 10 cups chicken broth
  • 1 lb chicken cooked and shredded
  • 12 oz. pastina
  • salt & pepper to taste

How to cook your chicken

  • Preheat your oven to 375F
  • Season your chicken with garlic powder, onion powder, salt and pepper.
  • Cook for 15 minutes, or until chicken is cooked through to 165F.
  • Shred the chicken using a mixer or 2 forks.

How to make the soup

  • In a large dutch oven, sautee your olive oil, onion, garlic, celery and carrots until onions are translucent. With the lid on, this should only take about 10 minutes.
  • Add in your 10 cups of chicken broth and bring to a boil.
  • Add in your pastina and cook for 6 minutes.
  • Add in your chicken and cook for an additional 2 minutes.
  • Serve and enjoy!
