Chicken Pastina Soup
This chicken pastina soup recipe is so delicious and so cozy. It's a simple chicken and noodle soup recipe that is perfect for those chilly winter nights.
- 2 tablespoon olive oil
- 1 onion
- 4-6 cloves garlic
- 3 stalks celery
- 3 large carrots or 2 cups of diced baby carrots
- 10 cups chicken broth
- 1 lb chicken cooked and shredded
- 12 oz. pastina
- salt & pepper to taste
How to cook your chicken
Preheat your oven to 375F
Season your chicken with garlic powder, onion powder, salt and pepper.
Cook for 15 minutes, or until chicken is cooked through to 165F.
Shred the chicken using a mixer or 2 forks.
How to make the soup
In a large dutch oven, sautee your olive oil, onion, garlic, celery and carrots until onions are translucent. With the lid on, this should only take about 10 minutes.
Add in your 10 cups of chicken broth and bring to a boil.
Add in your pastina and cook for 6 minutes.
Add in your chicken and cook for an additional 2 minutes.
