These Halloween candy cookies are one of my favorite ways to use leftover Halloween candy. They're like chocolate chip cookies, but a million times better!

Ingredients
  

  • 2 ½ c. all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ c. butter room temp
  • 1 c. packed brown sugar
  • ½ c. white sugar
  • 2 eggs
  • 1 ½ tsp. vanilla extract
  • 2 ½ c. chocolate candy chopped

Instructions
 

  • Preheat your oven to 350F.
  • In a separate bowl, combine your flour, baking soda, and salt. Whisk and set aside.
  • In your stand mixer or general mixing bowl, mix together your butter, brown sugar and white sugar.
  • Once that is combined, mix in one egg at a time. Once your eggs are mixed, add in your vanilla.
  • With your mixer on the slowest speed, slowly add your dry ingredients to your wet ingredients.
  • Once they are just mixed together, fold in your candy.
  • Do not chill this dough! Once the candy is folded in, scoop about 1 tablespoon of dough balls. Roll and place on a parchment paper-lined cookie sheet.
  • Chop up the remaining 1 cup of candy and place a few pieces on top of each dough ball.
  • Bake at 350F for 9-11 minutes, or until the edges are golden brown.
  • You'll have to bake in batches until the dough is gone.
  • Allow to cool, slightly, and enjoy!

Notes

Tips for making the best candy cookies.

Dry + Wet Mix. When baking anything, I always combine the dry ingredients in a bowl and set it aside. Then, I combine the wet ingredients and slowly add the dry to the wet. That's a baking tip you'll want to remember!
Save some candy. If you want beautiful bakery-style cookies, save some mix-ins and then place a few pieces on top!
