THIS EASY ONE-POT SAUSAGE AND RICE SKILLET IS ONE OF MY FAVORITE HEALTHY WEEKNIGHT DINNER RECIPES.

You can make this sausage and rice recipe with any pre-cooked sausage you like, but I love using Andouille chicken sausage or turkey kielbasa.

I top mine with Greek yogurt, cheddar cheese and green onions. This also makes for great leftovers making it a perfect healthy meal prepping recipe.
