Watermelon, Cucumber, Feta & Mint Salsa

All of a sudden I had a full bowl of this stuff, then all of a sudden it was gone. No, I didn’t sit alone and devour an entire bowl of this salsa by myself. I probably would…. honestly, who are we kidding? But I did have some help from my friends!


This is also a super easy appetizer to whip up if you have people coming over last minute, or if you’re just too lazy to put in the time and effort into making an appetizer.

For the bread, I just bought a fresh baked loaf from the local grocery store, sliced it very thin, buttered it and threw it in the oven (at 400) for about 5-7 minutes (just until the bread was golden brown)


As for the balsamic reduction, I just pour some balsamic vinegar into a small frying pan, bring it to a boil, let it sit there for about 3 minutes, then reduce the heat to medium low and let it sit there and simmer for about 10 minutes. I then put it in a bowl and throw it in the freezer, cause it is SO hot when it is done cooking.

  • 2 cups chopped Watermelon
  • 1 cup chopped Cucumbers
  • 1/2 cup crumbled Feta
  • 1 handful diced Mint leaves


  1. Combine all the ingredients in a bowl, mix together, and enjoy!
