Tortellini Veggie Soup

This is not my recipe, it is my mom’s. She is very good at making soups, Chinese food (honestly I’m not sure how- but her Chinese is great), and lots of other things. Last week, she made a Lemon Orzo Chicken Soup… that was great. This week, she made this Tortellini Veggie Soup. With the constant dropping temps, the snow storms plowing in, the sun setting earlier and earlier every night, soup is a wonderful, cozy meal this time of year. I have a whole line up of soups I am dying to make, or have my mom make, over these winter months.

After I had this Tortellini Veggie Soup for dinner last night, I went to cycling and the word of the day was “Christmas”. All of the songs are mashed together, meaning there are 2 or 3 songs with the same underlying beats put together… all of the songs last night had Christmas songs mixed with them. Needless to say, I came home in a great mood, our Christmas tree was looking fantastic, I made myself a cup of Candy Cane Green Tea (decaffeinated). You can read about the tea here. I bought this tea from Trader Joe’s a month or so ago. I laid on the couch by the tree, with my candy cane tea and my book “Everything I Never Told You” and had a wonderful night. Ohhhhhhh the post-grad joy’s in life…

Ok, now that my little rant is over- below you will find the printable recipe with everything you need to make this super yummy soup.

Tortellini Veggie Soup

Prep Time: 1 hour

Cook Time: 40 minutes

Total Time: 1 hour, 40 minutes


  • 2 Q. Chicken Stock
  • Sprig of Rosemary
  • Sprig of Thyme
  • 4 Sage Leaves
  • Head of garlic, cut in half
  • 1 Bay Leave
  • 28 oz. can Crushed Tomatoes
  • 1 can Cannellini Beans
  • Two Carrots, cut into thin slices
  • Two Celery Stalks, cut into thin slices
  • 1 Yellow Onion, diced
  • 1 6 oz bag Spinach
  • 1 c. Peas
  • 1 package Spinach and Cheese Tortellini


  • In a large pot, pour in your chicken stock and canned tomatoes (don't drain tomatoes!)
  • Put in your rosemary, thyme, sage leaves, garlic and bay leaf. Let this simmer for at least an hour
  • Remove the thyme, sage leaves, garlic and bay leave. Leave your rosemary in until the very end.
  • Add in your vegetables, and cook until soft.
  • Add in the tortellini and cook as directed on package
  • Add as much salt and pepper your desire.


This recipe you can add or subtract any vegetables you like or dislike. You may also add in chicken instead of tortellini if you are watching your carbs and would like more protein!
