I’m baaaaack! After a few weeks of trying to figure out what the heck was wrong with my site, more time redesigning my site and then trying to figure out what was wrong… again… I’m back! If you follow me on Instagram, and if you watch my stories, you saw a string of polls in my stories last week. I figured if my site was down, may as well ask people what they want to see once the site was live again. One of the polls was easy lunch ideas or easy dinner ideas. The vote was kinda sorta split, but easy dinners came out slightly on top. So, with my first recipe back, I’m bringing you these super delicious sweet potato taco boats!

For those of you who read “sweet potato” and are sitting there thinking “who wants to sit around and wait an hour for a potato to bake when you get home from work… I want to get home and eat”… I’ve included this link here for a way to bake sweet potatoes in your slow cooker. Pop them in there before you head to work for the day, and then when you get home all you have to do is prep your taco meat, assemble the boats and enjoy!

I included cheese on top of these and broiled the boats (with the cheese on top) for a few minutes. If you’re trying to go dairy free, you can use a dairy free cheese option, or you can always just omit the cheese! These boats could be made with whatever you usually like on your tacos. I put beefless ground, which I think I need to switch to just making tacos with veggies instead of processed fake meat, some fajita veggies (onions and peppers diced), diced tomatoes, topped it with cheese jalapenos and some of my best salsa ever. Sweet Potato Taco Boats

Ingredients

    For your taco boat assembly line
  • 1 lb taco meat of choice
  • diced onions and peppers
  • 4 tbsp taco seasoning of choice
  • For each taco boat
  • 1 sweet potato, baked
  • 4 tbsp of taco meat, or "meat", of choice
  • 2 tbsp diced fajita veggies
  • 1 tbsp diced tomatoes
  • shredded cheese to top, optional

Instructions

  1. if baking your sweet potato, preheat your oven to 425 and using a fork poke your sweet potatoes all over.
  2. bake for 45-50 minutes, until tender
  3. while your sweet potato is baking, cook your taco meat with 2 tbsp taco seasoning for however long it desires. if you are using real meat, be sure you cook it until it is fully done.
  4. set your taco meat aside, and cook your diced onions and peppers with the other 2 tbsp taco seasoning. cook until the onions are transparent.
  5. once your potato is baked, slice your sweet potato open and allow to cool.
  6. fill with taco meat, fajita veggies, top with cheese (if desired) and broil on high for 5-7 minutes... or until the cheese starts to brown.
  7. top with whatever toppings you want, i used diced jalapenos and salsa, and enjoy!
