When it’s too cold outside to have bonfires, but you still need your s’mores fix… you have to resort to making s’mores cookies. The s’mores craving was for sure filled. These cookies were so good, and best when hot. When they’re room temp they’re still good, but pop them in the microwave for 5 seconds before eating… unreal.

Also I’m getting side tracked for a hot second for confession hour- if you haven’t seen it on my Instagram story, my mom and I went and saw The Greatest Showman… I can’t stop listening to the soundtrack. I’m only through my first round this morning, but I was listening to it last night while I was working as well. But from the responses I got from my IG story, I’m not alone. I thought I was crazy for wanting to go see it again, and I was reassured I wasn’t.

I used the chocolate cookie recipe that I used in my chocolate and peppermint chip cookie recipe… the actual chocolate cookie is so good, so I figured don’t fix what isn’t broke. I just changed the mix-ins… obviously. I’m not going to be cruel and make you guys go to that page for the cookie recipe, though. I’ve included the s’mores cookie recipe below.

These made A LOT of cookies, around 3 dozen. I had to distribute the cookies appropriately so I didn’t sit at home and eat all them.

Sโ€™Mores Cookies

Ingredients

  • 2 1/4 c. flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 c. butter (2 sticks)
  • 1 c. brown sugar
  • 1 c. sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 3/4 c. cocoa
  • 1/2 c. chocolate chips
  • 1 c. mini marshmallows
  • 1 c. crushed graham cracker, to sprinkle on top of each cookie

Instructions

  1. preheat your oven to 375 line a baking pan with parchment paper
  2. in a medium to large sized bowl, combine your dry ingredients (flour, salt, baking soda and cocoa powder)
  3. in a large bowl, using a mixer, mix together your butter, white sugar and brown sugar.
  4. once the sugar and butter is mixed thoroughly, beat in one egg at a time. then mix in your vanilla.
  5. slowly pour your dry mix into your wet mix and beat until combined together.
  6. fold in your chocolate chips and 1/2 cup marshmallows
  7. roll your dough into golf ball sized dough balls, and bake for 8 minutes.
  8. after 8 minutes take your cookies out and top with 2-3 more mini marshmallows, put back in and bake for an additional 4-5 minutes.
  9. take your cookies out of the oven and while they're still hot sprinkle some more chocolate chips and graham cracker on top.
  10. repeat the above step until all your dough is used.
  11. let cool and enjoy!
