Is there a Grey’s Anatomy Anonymous? I’m seriously addicted. Shonda, you got me again. Speaking of which- do you all watch Scandal and/or How to Get Away With Murder?? Uhhhhhh, my mind is straight blooooooooooooooooown. For real, Shonda, how do you do it? Can I just have a peak inside your brain one of these days?? Last night I caught up on HTGAWM, and fell asleep at 10:30…. and was up at 6:30 this morning. Welcome to adulthood, am I right??

I’m also currently hooked on Ellie Goulding’s new album and Coldplay’s new song. Friday was a great day for new music! I know some people, like my brother Brian, completely bash Coldplay- and their last album pretty much was garbage. This song though, is so different. It somewhat reminds me of a Beck/Coldplay collaboration. You would never guess it is a Coldplay song when it first starts. As for Ellie Goulding, I mean she’s always on fire. Her music never disappoints.

Ok, so let’s get to talking about this skillet. What’s in this hodge podge of a breakfast- goodness. That’s what is in it.

This skillet has a base of potato and onion hash, oh but that isn’t it. The potatoes and onions are cooked in roasted crushed garlic, rosemary and thyme. I then threw in some cut up ham… because other than bacon and eggs, is there a better combo? This meal makes your house smell so good. On top of the ham, potato, onion hash I put a slice of American Cheese. As for the cheese aspect, you can add on whatever type of cheese or you can leave it out…. you do whatever you please. Last but not least, I topped them with eggs- cooked to perfection (if I can toot my own horn here for a second). I cook my eggs by simply cracking them on the pan and then covering the pan with a lid. I allow the steam to cook the egg whites to thinly cover the yolk.

Saturday Morning Skillet

Ingredients

  • 1 medium Russet Potato
  • 1/2 Yellow Onion
  • 2 slices Ham
  • 2 tbsp chopped Rosemary
  • 1 tbsp Thyme
  • 1 clove Garlic, crushed
  • 2 tbsp Coconut Oil
  • 1 slice Cheese, or 1/4 cup if you're using shredded
  • 2 Eggs

Instructions

    For the Hash:
  • Place 1 tbsp of coconut oil on your pan, and wait for the pan to heat up
  • In the meantime, chop your potatoes and onion. I cut my potato in half, then in quarters, then slices. This makes those little triangles you see in the picture.
  • Place your potatoes and onion on your heated pan, and then add your rosemary, thyme and garlic
  • Stir/flip the hash occasionally- you don't want to do it too often because you do want your potatoes to brown.
  • Then add in your ham, and allow to cook for a few more minutes
  • Once cooked, place your hash onto a plate. Put a slice of cheese on top of it
    For the Eggs:
  • Use your other 1 tbsp of Coconut Oil, and crack the eggs on the pan
  • Place a cover on the pan and allow the eggs to cook. You can tell they are cooked when the tops are completely white, but not stiff to touch. You can always cook your eggs how you prefer to!
