Don’t you hate when you’re sitting around thinking you’re so on top of things, and then you double check to make sure that your Raspberry Lemon Mini Cheesecake post is still scheduled and good to go, then you just realize it’s straight up not scheduled? Oh, and also my green smoothie cap was screwed on funky this morning so that spilled. Honestly, it’s just a case of the Monday’s over here… I’m ready for Tuesday. And by Tuesday I mean the weekend. Is it Friday yet?
Rambling aside, I made these raspberry lemon mini cheesecakes for a friend’s 24th birthday. I also figured they would be the perrrrrfect Valentine’s Day dessert recipe. I’m not going to lie, with the amount these make, these are more perfect for any “Galentine’s Day” parties, because you will have a plate full of these little mini guys.
I will also admit that this was my first time ever, in my 23 and 1/2 years of life that I ever made homemade cheesecake. I was v nervy to do so. So, naturally, I chickened out developing my own recipe, and I borrowed two recipes, one for the crust and one for the cheesecake, and make them into these wonderful, tiny, delectable mini cheesecakes.
Not only does the raspberry lemon fit very well with Valentine’s Day, but this is also a great recipe for the summer… it was like mildly warm today in Chicago and it got me reminiscing and missing the summer so much. These raspberry lemon mini cheesecakes are not limited to just rapsberry lemon. You can truly top with whatever berry you want, orrrrrr you can even get super crazy and candy your own lemon peel and top it on there! Or buy them from the store and save your sanity!
Just look at how cute they are! And the raspberries fit perfectly on top. The ratio of crust to cheesecake to raspberry, it’s just all perfect. Yes, I’m totally tooting my own horn right now.
