These Pink Lemonade Cupcakes are a great cupcake for summer.

These cupcakes are a fusion of Strawberry Lemonade and Pink Lemonade. The pink color in the frosting comes from fresh strawberries, but the frosting doesn’t have that strong of a strawberry flavor. My normal lemon cupcake recipe makes roughly 15 cupcakes. So, making mini cupcakes, this recipe makes anywhere from  30-33 mini cupcakes. And mini cupcakes don’t have calories, so eat up! Just kidding, they do, unfortunately. But, you can tell yourself they don’t?

Pink Lemonade Cupcakes


  • 1/2 c. Butter, softened
  • 4 c. Powdered Sugar
  • 2 tsp Vanilla Extract
  • 1/4 c. Strawberries, chopped
  • 1-2 tsp Milk or Cream


  1. Whip the butter until it is light and airy.
  2. Add one cup of powdered sugar, mix together.
  3. Add 2 tsp vanilla extract and strawberries and whip together.
  4. Alternate adding the rest of your powdered sugar, and milk/cream.
