Mint Oreo Ice Cream Cupcakes

Cupcakes are always a fun treat, but who wants the oven on in the middle of the scorching hot summer? These mint oreo ice cream cupcakes are perfect for the summer. No oven required, super simple to make, and a fun twist on how you eat your ice cream.

When I was little, I remember wanting to bake or make something in the kitchen while I was on summer vacation. However, my parents would always tell me “you can’t have the oven on in the summer.” I used to think that when I lived on my own, I would bake and have the oven on whenever I want. Well, no. I don’t. I have no desire to have the oven on, it is WAY too hot. Plus, July is National Ice Cream month. As if we all (just me?) needed another excuse to eat more ice cream.


When making these, I found it helpful to allow the ice cream to sit out for some time. You want your ice cream somewhat melted, and you want to leave it out for a little bit after scooping it onto the Oreo. This ensures that the ice cream will melt together with the Oreo.

However, you will want to freeze your ice cream before topping it with the whipped cream. The last thing you want is your whipped cream sliding off. How do I know it will slide off? I made the rookie mistake of not freezing my ice cream before topping it with the whipped cream.

Mint Oreo Ice Cream Cupcakes


  • 1 carton ice cream of choice, you probably won't use the whole carton!
  • 12 cookies of choice
  • Whipped cream and sprinkles to top


  1. Take your ice cream out of the freezer and allow it to melt.
  2. In a cupcake tin, line all 12 cups.
  3. On the bottom of each liner, place your cookie.
  4. Using an ice cream scooper, give each cup a generous scoop.
  5. Once all the cupcake tins are filled in, allow the ice cream cupcakes to sit out for at least another 10 minutes. Then, place in the freezer.
  6. Once you are ready to eat the cupcakes, top with whipped cream and frosting.
  7. Enjoy!
