Matcha Chia Seed Pudding

Matcha Chia Seed Pudding

Recently, I’ve discovered a love for Protein Bar (sorry, wallet), which then introduced me to my love for all things matcha. I decided it was time to buy some matcha of my own and start experimenting with recipes. Within the next few weeks, you may or may not see a handful of matcha recipes- and now you know why. I’ve become obsessed with it. Call me cliche, call me basic, whatever- it’s so good for you it is hard to not love.

Anyone who knows me knows that I’m the furthest thing from a morning person, and I stay in bed every possible second before having to get up and get ready to go to work. Hence why I LOOOOOVE (like maybe a little too much love) make ahead breakfasts. Chia seed pudding is always a great go to. I posted a recipe for blueberry overnight oats (find the recipe here!).

I stuck with the whole “green” theme, kinda, and topped this pudding with some kiwi, bananas (not entirely green, but mostly green) and honey. In the recipe itself I also included some vanilla extract. I like the vanilla flavor mixed with the matcha.

Below you will find the recipe for this super easy Matcha Chia Seed Pudding!

Matcha Chia Seed Pudding

  • 1/2 c. Chia Seeds
  • 2 tsp Matcha
  • 2 c. Milk, I use unsweetened vanilla almond milk
  • 2 tsp Vanilla Extract
  • 1 Banana, optional
  • 1 Kiwi, optional
  • Honey to drizzle on top, optional

  1. In an air tight container, combine your chia seeds, matcha, milk and vanilla. Whisk for a few seconds until the matcha is combined in the milk/chia seed mixture.
  2. Seal shut, and keep in the fridge overnight. In the morning, top your pudding with whatever fruit you wish, and drizzle some honey if you'd like.
