As if guacamole isn’t good enough, try adding in some bacon and sharp cheddar cheese…… and then your world is forever changed for the better. I was on the phone with my mom after I made this and she was initially put off by the thought of putting bacon in the guacamole… and then I just repeated “what? mom, it’s bacon” and she came to her senses. I also included cheese, cause more salt and fat…. aka more delicious flavor.
However, what I did with the cheese that I wouldn’t recommend is that I used fresh grated extra sharp cheddar. It was very finely shredded. It got lost in the mix for sure. Next time, I would even use a spicy cheese like pepper jack, and shred it thicker or just chop it and fold it into the guacamole goodness.
For those who even like to spice things up, you can throw a jalapeno or two in there. Get ~crazy.
