Lemon Oregano Chicken Soup with Zucchini + Spinach

A Series of Unfortunate Events came out on Netflix, so you can catch me binge watching that. Growing up, I would fly through those books. They were one of my favorite series in grammar school. Plus, all Netflix shows are phenomenal. I am 4 episodes in, and couldn’t be more hooked. Not to mention, I couldn’t be more hooked on this lemon oregano chicken soup.

I am slowly but surely getting over a cold, and this soup was majority of what I ate. There is an entire bag of frozen spinach in this soup, plus two lemons. I’m no doctor, but this soup is perfect for someone who has the flu, and their throat hurts too bad to eat anything. If you didn’t get the hint, that was me the past few days. I have never experienced being hungry and having no desire to eat, or not being able to eat.

Other than your basic veggie base of carrot, celery and onion,  I added in zucchini and spinach. I opted to not add noodles to this soup, butttttt you can add noodles if you like. This soup is yours for the making.

Lemon Oregano Chicken Soup


  • 3 tbsp oil
  • 1 onion, chopped
  • 3-4 carrots, chopped
  • 3-4 celery stalks, chopped
  • 2 zucchini chopped
  • 2 cloves garlic
  • 1 lb chicken, cooked and diced
  • 1 bag frozen chopped spinach
  • 8 c. chicken stock
  • 2 c. water
  • 1/4 c. oregano
  • Juice of 2 lemons
  • 4 tbsp lemon pepper


  1. in a large pot, heat your 3 tbsp of oil over medium heat.
  2. pour in your carrots, celery + onion. sautee for about 7 minutes.
  3. add in your zucchini +continue to sautee for an additional 5 minutes. add in your minced garlic, salt + pepper
  4. pour in your chicken stock + water. then, pour in your diced chicken, frozen chopped spinach, lemon juice, oregano +lemon pepper
  5. over high heat, bring your soup to a rolling boil.
  6. once at a rolling boil, reduce to medium heat, cover and let it simmer for 1 hour.
  7. enjoy!
