Grilled Zucchini Summer Salad

My idea for this salad initially started out as a Grilled Avocado Salad… that didn’t turn out as planned when two of the avocados were super ripe and then one was hard as a baseball. Truly living out the avocado memes. So, instead, when gardens are thriving this time of summer, I decided to use some home grown zucchini, and kinda throw in whatever else sounded good. This grilled zucchini salad did not disappoint.

 

I kind of just threw in all things summer and colorful because salads can be fun like that. Yes, fun. I would be lying if I said I looked at this salad and didn’t squeal out of excitement. It doesn’t take much to excite me.

The only thing I would change is I would marinate the zucchinis before grilling them. Here is a great, basic zucchini marinade recipe from the Food Network.

Below is the recipe for what I used for this salad. I won’t include the amounts, because salads are up to your making… if you want more tomatoes, get on with your bad self, and put lots of tomatoes in there.

Grilled Zucchini Summer Salad

Ingredients

  • Arugula
  • Beets, chopped
  • Pear Tomato, halved and sliced
  • Zucchinis, chopped and marinated
  • Blueberries
  • Blue Cheese (optional)
  • Dressing of choice, I used a basic balsamic

Instructions

  1. Top your bed of arugula with all your fruits, veggies and cheese.
  2. Dress + enjoy!
