The grilled/smokey taste on the sweet butternut squash is great. Normally, I don’t like hot/grilled toppings on my salads (like I will put grilled chicken in the freezer for a hot minute until it is cold and then put it on my salad), but I surprisingly really enjoyed the hot grilled butternut squash on this salad.
I topped it with a drizzle of balsamic vinaigrette. You may not even want dressing, this salad really doesn’t need much. So, if you do dress the salad, don’t put a lot.
I ate this salad as my whole meal, because of the cleanse I am on. The goat cheese broke the cleanse “rules”, but the rules just needed to be broken for this salad.
