Grilled Butternut Squash Salad

This salad I think is my new go to summer salad. For two main reasons…

  1. It has 4 ingredients- like could it get anymore simple?
  2. Goat cheese- cause, I mean, goat cheese…

Also, who knew that pickling red onions was so easy? Honestly, I feel like I could pickle anything (I probably can’t though). Want to know where I got my pickled red onion recipe? I found it here!

The grilled/smokey taste on the sweet butternut squash is great. Normally, I don’t like hot/grilled toppings on my salads (like I will put grilled chicken in the freezer for a hot minute until it is cold and then put it on my salad), but I surprisingly really enjoyed the hot grilled butternut squash on this salad.

I topped it with a drizzle of balsamic vinaigrette. You may not even want dressing, this salad really doesn’t need much. So, if you do dress the salad, don’t put a lot.

I ate this salad as my whole meal, because of the cleanse I am on. The goat cheese broke the cleanse “rules”, but the rules just needed to be broken for this salad.

Below you will find the recipe for this salad! The recipe below makes two small salads. They are perfect for a side dish or an appetizer!

Grilled Butternut Squash Salad

Ingredients

  • 1/2 Butternut Squash, seeded and thinly sliced
  • 3-4 handfuls Arugula
  • Pickled Red Onions
  • Goat Cheese
  • Balsamic Viniagrette

Instructions

  1. Sprinkle your uncooked butternut squash with salt, pepper, and garlic.
  2. Place on grill (be careful so they don't fall between the grill's cooking grids)
  3. Cook for about 7 minutes on each side- this is why having them sliced thin is important! You don't want to bite into a crunch under cooked squash.
  4. While your squash is cooking, place your arugula on your plates. Once the squash is done, place the pieces over the arugula, then top with the pickled onion, goat cheese and balsamic vinaigrette.
  5. Enjoy!
