Greek Chopped Salad

This is a last minute, but also a super easy recipe. It’s a great lunch or dinner idea, and super flavorful. With all things Mediterranean inspired, this salad isn’t boring by any means. I used leftover grilled steak from Sunday night dinner last night for my protein, and that was a great addition. You could also use a Greek chicken, or chickpeas if you’re trying to be vegetarian.

You miiiiiight not have many of the things in this salad in your fridge. Like pepperochini, or roasted red peppers. But, they should be a staple in your fridge. They make for great salad additions, and if you last minute have people over, they are great to throw on a cheese board and put together a last minute appetizer.

I kinda loaded mine with olives, cause I’m a huge weirdo and love olives. Stick me in front of an olive bar and I’m a happy camper. You can obviously leave out whatever you don’t like. Red onion would also make for a great addition to this salad. I added a soft-ish boiled egg, just cause I was initially going to make a cobb salad… but then it turned into this.

Greek Chopped Salad

Ingredients

  • 2-3 handfuls of mixed greens
  • 1 cup protein, I used sliced steak
  • 1/4 roma tomato, diced
  • 1/4 cup diced cucumber
  • 1/4 cup diced roasted red pepper
  • 3 pepperochini halved and diced
  • 5 kalamata olives, pitted
  • 1 hard boiled egg
  • 2 tbsp balsamic vinegar dressing
  • sprinkle feta cheese to top

Instructions

  1. in a large bowl, place your mixed greens, then top with the rest of your salad goodies. Dress and enjoy!
