Hey everyone!!! Welcome to my little holiday special, “The 12 Cupcakes of Christmas”!!! I’m super excited to bring you guys 12 of my favorite holiday cupcake ideas. Some are not my recipes, rather other bloggers. I will give credit where credit is due, though! I thought this would be a great way for people to be inspired, learn about other amazing blogs out there, and get in the overall holiday spirit. I will be posting other recipes throughout these 12 days for more holiday inspiration and just overall good eats.Kicking off these next 12 days is Gingerbread Cupcakes!

I was nervous about creating my own, so I got this recipe off of Blogging over Thyme. She has a great site, and you all should really go check it out! I added some of my own little tweaks, but overall- this is entirely her recipe. I was nervous about baking with the molasses and spices (I had never made even homemade gingerbread men before- so I had no clue what to do!) She tops these cupcakes with a marshmallow frosting and a pomegranate caramel glaze. Don’t get me wrong, the marshmallow and pom/caramel glaze sounded down right delicious… butttttt, I had already planned to do a marshmallow frosting for another cupcake (stay tuned), and I really wanted to start venturing into cream cheese frosting. With that being said, I made my own cinnamon cream cheese frosting for these cupcakes. It goes great with the mix of spices and molasses flavor of these cupcakes, yet it is simple enough so there isn’t an overload of flavor!

I had found these super cute gingerbread candies to put on top of the cupcakes as well. They are the perfect finishing touch, but if you do use these- be careful when you’re peeling them off the paper!!!! They are super delicate and I had a few little guys lose some arms and legs in the process. But seriously, how cute are those little toppers??

Gingerbread Cupcakes

Ingredients

    For the Cupcakes:
  • 1 & 3/4 c. all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1/4 tsp nutmeg (BOT used 1/4 tsp cloves)
  • 1/4 tsp allspice
  • 1/4 tsp salt
  • 1/4 c. canola oil
  • 1/4 c. unsalted butter (1/2 stick or 4 tablespoons), melted and slightly cooled
  • 1/2 c. packed light brown sugar
  • 1/2 c. black strap molasses (BOT uses unsulphured)
  • 1 large egg, room temperature
  • 1/2 c. Milk (BOT uses water)
    For the Frosting
  • 1/2 c. butter, half a stick, room temp
  • 1 8oz. package cream cheese
  • 3 c. Powdered Sugar
  • 2 tbsp Cream
