I didn’t really give my bestttttt effort this weekend for the Whole30. It wasn’t the worst, but it wasn’t the best. Meh. Whatever, life goes on. I picked back up the past couple mornings by making what could be considered my newest addiction: egg, avocado and potato “toast”.
I, along with 99.99% of the world, love avocado toast. Throw an egg on there, and it’s one of the simplest yet greatest meals you’ll ever consume. However, seeing as though I’m still attempting to do the Whole30, I can’t have toast. Trying to get my fix in, I sliced a potato length wise, cooked it until both sides were a dark golden brown, threw some avocado and an over easy/medium egg on there. Life forever changed.
This is so easy considering it’s just slicing potatoes, leaving them on a pan to cook, and then cooking an egg to your liking. If anything is better in the morning than a make-ahead breakfast, it is a breakfast that you can cook in 10 minutes or less.
