I recently ordered myself a spiralizer and a food processor, and I’ve been super excited to use both of them. For my spiralizer the first thing that came to mind was zoodles, cause I mean, look on Pinterest or the internet in general… it has been all zoodle everything for a very long time. I’m honestly surprised my spell check is telling me that zoodle isn’t a word right now.

This stir fry is so delicious and it makes SO much. my roommates and I “split” (I ate majority) one bowl, and I still had a ton left over. Not to mention the amount of sauce this recipe makes is unreal. My only regret is not making cauliflower or brown rice to go under this stir fry. That would have been amazing. You win some, you lose most.


Let’s talk about the sauce. It sounds like there’s a lot going on, but trust me, it works. The sauce is so delicious. The spicy, nutty, sweetness, tartness and citrus all combine to make a suuuuper flavorful stir fry sauce to stir your veggies in.

As for the stir fry, what vegetables you want to use is all up to you. Use your favorite stir fry veggies to stir in with the zoodles. I used mini sweet peppers, mushrooms, green beans, carrots, water chestnuts and bean sprouts. Other good veggie options could be mini corn, snap peas, onion, broccoli, or cauliflower.


To cook the stir fry, sautee all your veggies (except the zoodles) in 2 tbsp of oil, 2-3 cloves fresh crushed garlic, salt and pepper (the amount of salt and pepper is up to your discretion). Sautee for about 10 minutes, then add in your zoodles. Cook for another 5 minutes, and then add in your sauce. Find the recipe for the sauce below!

  • 1/2 c. Soy Sauce, I use low sodium
  • 1/2 c. Water
  • 1 tbsp Rice Vinegar
  • 1/2 Lime, juiced
  • 1 tbsp Ginger, I use my garlic press to press/mince the ginger
  • 1 tsp Peanut Butter
  • 2 tsp Crushed Red Pepper Flakes


  1. In a bowl, combine all these ingredients. Whisk until the peanut butter is fully combined.
  2. In your large frying pan, pour your sauce over your veggie stir fry. Let it simmer together for 7-10 minutes.
  3. Let cool and enjoy!
