Whether it be for Father’s Day, 4th of July, or just a regular summer dessert… you are 100% going to want to make this cookies ‘n Irish cream no bake cheesecake at least once this summer. And by once I mean like minimum 5 times.
For the crust of this cheesecake, you can take the easy route and buy your own Oreo crust. I did do that…. thennnnnnnnnnn I didn’t think through the fact that you can’t take the crust out of the aluminum pan it comes in to put it in a pretty glass pan… aaaand it broke. The BIGGEST brain lapse… like duh, an Oreo crust is so fragile?
LUCKILY, an Oreo crust is so easy to make. So, I just made my own by putting 25 Oreo’s in a food processor, and processing them until you’ve got Oreo dust (basically dust), transfer the crumbled Oreo’s to a large bowl, mix in 6 tbsp of butter, stir it, then pack it all in your pie pan!
You’re going to want to allow at least 20 minutes for your Oreo crust to cool in the fridge. Which is perfect timing to make the actual cheesecake part.
