Chipotle Sweet Potato Buddha Bowl

Monday detox coming in hot. I did nothing but lay on my couch, binge watch Mindhunter (that came out Friday… finally)… I loved it. No surprise there, it’s right up my alley with true crime, psychology and a sort of Law & Order feel to it. Chinese take-out was basically all I ate all weekend. Then it ended with a Sunday night dinner of Haluski (find basic recipe here). A polish dish of egg noodles, sauteed cabbage and onions, and we add polish sausage. It’s basically just a ton of butter goodness. Needless to say, I am in need of a detox, and this chipotle sweet potato Buddha bowl will do the trick.

 I put chipotle tofu in the center of this buddha bowl as my “meat”… trying to keep it somewhat vegetarian for a detox. You can make this same bowl with chicken or steak or whatever you like. I would just suggest seasoning it with chipotle. You can also add your favorite veggies, I used this image from The Good Hearted Woman to create my first buddha bowl.

These bowls are similar to salads, but they are not exactly salads, which I like. Sometimes salads can get just too blah and you need to switch it up. Below is the recipe!

Chipotle Sweet Potato Buddha Bowl

Yield: 2 Bowls


  • 1 sweet potato, sliced
  • 2 tbsp olive oil
  • 1 tbsp chipotle powder
  • 1 tbsp garlic powder
  • 2 handfuls spinach
  • 1 c. brown rice, cooked
  • broccoli
  • cucumber
  • carrots
  • corn
  • protein of choice


  1. Preheat your oven to 375 and line a cookie sheet with aluminum foil.
  2. Place your sliced sweet potatoes on the cookie sheet, drizzle with oil, and sprinkle with your chipotle powder and garlic powder.
  3. Roast for 30 minutes, or until you can poke effortlessly with a fork.
  4. In a shallow bowl, place one handful of spinach in each bowl. Place 1/2 c. of brown rice in each bowl.
  5. Fill your bowl with veggies and protein of choice. Once your sweet potatoes are cooked, allow them to cool, and place them in your bowl.
  6. Dress with dressing of choice and enjoy!
