After a month (yes, it took me basically a month) to be fully moved in, 10 days in Europe, a replenished bank account, a week of a non-processed foods and no meat detox, I’m back with this breakfast cheese fries recipe. Seriously couldn’t be further away from non-processed and no meat.
My new apartment is so cute and quaint and all my friends and family know how obsessed with it I am. My couch finally came in on Monday and thank god for the FedEx people, because they delivered my couch directly to my door. I honestly didn’t know how I was going to push a 115 lb box up a flight of stairs into my apartment. It would have ended in a complete disaster, probably a broken bone or two.
My kitchen is alllllmost set up, I’m waiting on a power drill to put together my kitchen island so I can have more room to cook and hold all 1 million of my kitchen gadgets. My room looks like the worst tornado of the century came through it, but that’s future Katie’s issue.
Staying in the present, I have these phenomenal Breakfast Cheese Fries recipe. Because, let’s be honest, on a Saturday or Sunday morning after a long night, you deserve a fat pile of fries with melted cheese, bacon and eggs. Still being honest, I used store-bought frozen french fries and heated them up in the oven. Homemade fries were just a little too much effort for my Saturday morning self (and yes, I had already had like 3 cups of coffee).
If you want to make it easy, you can just top the fries with shredded cheese, as I did. However, when (not if, when) I make these again, I am going to definitely make a cheese sauce for the fries. Here’s a recipe for 5 minute nacho cheese sauce.
You can also add breakfast sausage if that’s what you fancy over bacon, you can add turkey bacon (but I mean you’re making cheese fries, that’s kinda like adding a Diet Coke to your “make it a large” Big Mac meal), you truly can top these with whatever breakfast/omelette/skillet essentials you like.
