Anyone else extremely last minute? As in like, going to a 4th of July party in a couple hours and just had an idea of what to make? Well, here’s a super easy appetizer for you to bring to your 4th of July party… berry caprese salad.
This long, holiday weekend I finally started the Harry Potter series… 23 going on 24 in a few weeks and I have never read a book or a movie. Aaaad since I decided to spend the long weekend back home in the ‘burbs, I aimed to finish that book along with two others on this long weekend. Instead, I bought a ton of berries and made 3 berry recipes, and utilized the massive basil plant in my parent’s backyard and convinced my mom and my little brother to be my handy helpers.
SO, going to a neighborhood 4th of July party, I told my mom I will make something. Classic, I didn’t make 4th of July recipes weeks in advance leading up to today… Told myself I would… didn’t. Thinking of something, patriotic, quick, and easy… I stuck with my berry/basil theme of the weekend and made this berry caprese salad.
Personally, I sliced my blueberries and the mozzarella pearls in half, but in all honesty you do not have to do that. Clearly you have to chop the strawberries, but not so much the blueberries or mozzarella. The berries mixed with the cheese, basil, salt and garlic give you all the sweet and savory feels. Plus, it’s red, white and blue… keep with the theme.
I sliced up some french bread, made some balsamic reduction (FYI… I only made the reduction because I couldn’t find pre-made reduction)… throw some berry caprese on the bread and you have yourself a killer appetizer.
