Avocado Cilantro Jalapeno Dressing

Avocado Cilantro Jalapeno Dressing

Anyone else watching all of these 20th anniversary specials of JonBenet? If so, anyone else have trouble this morning after watching part 2 of the CBS special? It’s a black hole once you start looking into all these theories and all the evidence. I’m a sucker for all things true crime (shows, documentaries, podcasts (My Favorite Murder)), and these specials are sucking. me. in. Needless to say, I managed to wake up, make this avocado cilantro jalapeno dressing, and write this post… all after a night of endless research and reading. Go me. I’m unstoppable today.

This is sort of a two part recipe, because I am posting a Whole30 friendly fajita chopped salad tomorrow. That’s right, this dressing is Whole30 friendly! Woo!

In an effort to keep the fat content of this dressing down, I mainly used water to create the “runny” consistency. I did use some oil, but considering I used an entire avocado, I didn’t want to rely on oil.  I only used 3 slices of the entire jalapeno, because I didn’t want it to be super spicy. Don’t forget to wash your hands an absurd amount of times to ensure that all the jalapeno juice is washed off!!! Seriously, nothing is worse than rubbing your eyes post jalapeno chop and that burning sensation.

You could even forgo the amount of water and use this as a dip. I’ve done it before, and it does not disappoint.

Below you will find the recipe for this Avocado Cilantro Jalapeno Dressing! Stay tuned for my Whole30 Chopped Fajita Salad tomorrow on the blog!

Avocado Cilantro Jalapeno Dressing

  • 1 Avocado
  • 2 Handfuls Cilantro
  • 2-3 Cloves Garlic
  • 3 slices Jalapenos, or more if you want it super spicy
  • 2 tbsp Extra Virgin Olive Oil
  • 1/4 c. Water, or more if you want it more runny
  • Salt and Pepper to taste

  1. Put all ingredients in a food processor. Blend until it is of a dressing consistency. AKA when it can run off a spoon very nicely. This will give you a nice pour over your salad.
