48 Hour Ribs

My dad makes ribs once a year every 4th of July weekend. Even though 4th of July has passed, that doesn’t mean that you can’t fire up your grill this weekend and make some bombbbbbb ribs. These things are seriously so good, they will be gone and eaten in the blink of an eye.

So needless to say, I cannot take responsibility for this recipe. These are 100% my dad’s specialty, and I have not tried to re-create these at all. Why fix something that’s not broken. And something that is being made for you that you don’t have to do any work for.

First things first is you need to peel off the skin from your ribs, which you can read how to do here.

48 Hour Ribs


  • baby back ribs
  • hickory chips
  • rib rub, enough for however many slabs you have
  • favorite bbq sauce, about 1 bottle for each slab


  1. In a charcoal grill, add a small pile of charcoal to one side, add hickory chips (soaked) bring temp to around 250.
  2. Add a rub to ribs plus salt
  3. Smoke ribs for about an hour to hour & half.
  4. Place ribs in a pan, cover with foil and refrigerate overnight.
  5. Next day add bbq sauce & cook in oven for 2 hours at 250 degrees.
